7 Food Trends to Watch By Annette Bertelsen Growing global demand, changing consumer appetites and developing technology in nutrient production will change how we bring food to the table. G lobal food demand is rising dramatically. This growing demand, coupled with subsequent changes in consumer attitudes regarding food, will aff ect not only what we eat in the future but how it will be made. “By 2050, we’ll need 60 percent more food to feed the world’s population. Food ingredient industry innovation will be key,” says Kara VanKleek, global marketing director, CHS Processing and Food Ingredients. “Consumers are demanding more healthy, convenient and premium foods — and food manufacturers rely on ingredient manufacturers to achieve that.” More food manufacturers are looking for customized ingredients. “If we can provide a value-added ingredient that combines multiple components, our customers have to buy and store fewer ingredients and it makes their manufacturing process more effi cient,” says VanKleek. Ingredient companies continue to invest to meet the demand for innovation. CHS Processing and Food Ingredients recently opened a new research and development facility in Minnesota, just one of many investments CHS has made since fi scal 2013 to address some of the developing trends. > Your CHS Connection 7
